Sunday Baking



One of my Christmas presents was a set of tart dishes, so I thought I would try my hand at making some tarts. Of course, I've never made tarts before, so this was a first. I looked up a recipe for making the tart pastry dough. It called for cake flour and all purpose flour. I had all purpose flour, but I needed to buy some cake flour. But as luck would have it, none of the local groceries had cake flour. The only thing I could find was Hodgson Mill Whole Wheat Pastry Flour. So I bought it and used it. Maybe it was not the best choice. It was not milled as fine as I expected. But the tart shells came out looking pretty good for my first attempt. At a quarter of an inch thick, they were a little thicker than I would have liked them. Next time I'll make it closer to an eight inch thick.

Next I made a pastry cream, which came out very good. It had just a hint of sweetness that went well with the fruit which were sweeter. I filled each tart shell about halfway with the pastry cream. Then I covered it with Kiwi, Pineapple, Strawberry, Blackberry, Raspberry, and Blueberry. I made some fresh whipped cream to go with it. It was pretty good, but I will try to find some cake flour and try to do a better job on the tart pastry dough. See a picture of the tart above.

  1. That looks scrumptous. I do not like Hodgson Mills products because when I went up to Helen we passed by it and I bought corn meal, grills, etc., and all of it went bad. It did not have preservatives. This reminds me of the fruit pizza. I love those and have always wanted to make one.

  2. The tart shell wasn't my favorite, but the pastry cream, fruit and whipped cream was excellent.

  3. Thought of you when I found miniature loaf pans yesterday at half price. I bought 6 so that I could make hostess gifts for the holidays. If you could like some, I can go get you some.

  4. The tart looks great. I always buy Swan's Down Cake Flour. It comes is a red box with a white swan shilloute on the front. I hope you can find some.
