Day 98 - Marjolaine

On Friday I started making this Marjolaine, and I finished it today. Marjolaine is made from Marjolaine sponge cake, Frangelico ganache (dark chocolate in the center), a hazelnut meringue disc (thin disc in the middle), hazelnut butter cream icing. Then milk chocolate is sprayed on the outside of the butter cream icing. I thought it tasted good.

  1. So, how long does it take to make a Marjolaine? It looks interesting. What did you use to spray the milk chocolate on the outside? How do you make hazelnut meringue and how do you get the Frangelico ganache in the center?

  2. -We made it in one class.
    -We used a paint spray gun that you can get at Home Depot.
    -The hazelnut meringue is made in the cake method. You make the meringue,then egg mixture. You fold the meringue in 1st then the dry ingredients into the egg mixture.
    -You make the ganache and put it in a ring mold to freeze then when it is frozen and your ready to make the cake you just take it out and place it when your making the layers
